BLOOM (TAMPA) – Thanksgiving is a time for family, gratitude, and, of course, delicious food. This year, why not spice up your turkey dinner with a bold and flavorful Cuban twist? Top caterer and chef Deb Murray joined Gayle Guyardo, host of the global health and wellness show Bloom, to share a standout turkey recipe that’s sure to become a family favorite.

Introducing Myrna’s Mojo Turkey Recipe, a mouthwatering dish infused with the vibrant flavors of garlic, sour orange, and spices that pay homage to Cuban culinary traditions.


Myrna’s Mojo Turkey Recipe

Serves 4-6

Ingredients:

  • 12–14-pound whole turkey, thawed and rinsed

For the Marinade:

  • 6 whole cloves garlic, peeled and minced
  • 1 teaspoon salt
  • ½ teaspoon oregano
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • ¼ cup extra virgin olive oil
  • ½ cup sour orange juice (see note below)

Instructions:

1. Prepare the Turkey:
Rinse the thawed turkey under cold water and pat it dry with paper towels.

2. Make the Marinade:
In a large bowl, combine the minced garlic, salt, oregano, cumin, black pepper, olive oil, and sour orange juice. Stir until well blended.

3. Marinate the Turkey:
Place the turkey breast side down in a large bowl or container. Pour the marinade over the turkey, ensuring it’s fully submerged. Cover with plastic wrap and refrigerate overnight to allow the flavors to meld.
The next morning, flip the turkey breast side up and marinate for an additional 2 hours.

4. Preheat the Oven:
Set your oven to 350°F (175°C).

5. Prep the Roasting Pan:
Spray the rack of a roasting pan with nonstick spray to prevent sticking.

6. Roast the Turkey:
Place the turkey breast side down on the prepared rack. Roast for 1 hour in the preheated oven.

7. Flip the Turkey:
Using tongs, carefully flip the turkey breast side up. Rub a little extra olive oil on the skin for added browning and flavor. Continue roasting for an additional 1 to 1.5 hours, or until a meat thermometer reads 165°F (75°C) when inserted into the thickest part of the thigh.

8. Rest the Turkey:
Once the turkey is cooked, remove it from the oven and let it rest for 20-30 minutes to ensure juicy, tender meat.

9. Carve and Serve:
Carve the turkey and serve it with your favorite sides for a meal that’s both comforting and vibrant.


Chef’s Tip:

If sour orange juice isn’t available, you can find it bottled in the Latin section of many grocery stores. Alternatively, combine the juice of a large orange with the juice of half a lemon for a similar tangy flavor profile.
