TAMPA (BLOOM) – One of the ways you can live in season is to incorporate the foods and flavors of the season into your diet. Longevity Nutritionist, Ella Davar, RD, who is the author of “Cooking for High Performers” joins Gayle Guyardo, the host of the global health and wellness show, Bloom, with a fall-inspired soup designed for longevity.

Sunchoke Soup

Ingredients:

  • 2-3 Sunchokes
  • 1 stalk of Celery
  • 1 root of Celeriac
  • Small bunch of Kale
  • 1 clove of Garlic
  • 1-2 Shallots
  • 1 inch of fresh Ginger

Instructions:

  1. Start by washing the sunchokes really well and chop them roughly.
  2. Next, peel the celery root, and shallot, wash, and chop.
  3. In a big pot add 2 cups of water, herbs, thyme, bay leaf, and a pinch of salt.
  4. Cover and cook on medium heat. While the vegetables stew, prepare your other ingredients for the soup.
  5. Blend together celery and garlic.
  6. Then grate the ginger and squeeze out its juice.
  7. Remove the bay leaf and thyme from the cooked vegetables and add them to the blender as well.
